Fried Calamari (Squid);
Calamari (Squid) is one of the most popular seafood products in all coastal countries. Delicious menus have been created using different cooking techniques in the Far East, America, and Mediterranean countries. The squid recipe that we offer you is a delicious recipe from Turkish cuisine with its specific tarator sauce.

How To Make Crispy Fried Calamari Squid?
Cut the squid into 1 cm rings and put them in a large bowl. (I also use grills/squid legs) Add baking soda and salt and knead them pressing for 3-4 minutes.
When the squid leave its water, pour sparkling mineral water into it. Put it in the refrigerator and wait at least 1 hour (it is recommended to keep it for a long time so that it softens. However, I never kept it for more than 1 hour)
While waiting for the squid, we the tarator sauce;
First, crumble the inside of the stale bread (or add breadcrumbs) and grind it with the walnuts in the chopper, then add the garlic and grind until the garlic penetrates the mixture.
Add the yoghurt, mayonnaise and olive oil and continue to blend. As the breads absorb water, you can adjust the amount of olive oil and the density according to your taste. Add the desired amount of salt, black pepper and finely chopped capers and place in a small serving bowl.
To fry squid; Beat the egg well in a bowl and remove the chopped squid from the soda sauce and drain. (so that the squids are crispy and soft, we do not wash them while they are fried)
Then pour it into the bowl without washing it and mix it well so that it is covered with eggs. Pass them through flour and then remove the excess flour with a sieve and pour it into the oil preheated.
Fry the squid for about 1-1.5 minutes, remove from the pan and put on a serving plate and serve with tarator sauce and optionally with lemon.
You can enjoy the homemade crispy fried squid by dipping it in the sauce. Bon Apetit!
