Stuffed Leeks; The homeland of leek, which grows in different forms in the region from Portugal to Iran, is Mediterranean countries. Leek, which is consumed in different ways in all these countries, has a special place in Anatolian and especially Balkan cuisine. In fact, the phrase "I won't eat even if it's leek" is an expression of how much Albanians love leeks. Here is another version of leek, a delicious dish that looks difficult but is easily made.

How To Make Stuffed Leek Triangles With Ground Beef?
First, cut the leek from one side longitudinally with a knife and remove it leaf by leaf as shown in the figure.
Throw it into the boiled water in a large pot, boil it lightly until it reaches a consistency that will not break while wrapping, and take it out and leave it to cool.
Meanwhile, prepare stuffing material.
Put the spices and knead it.
Spread the boiled leek leaves, remove the skin and put the ground beef on the tip.
Wrap it as a triangle as shown in the figure.
Wrap the filling about 3-4 times so that it does not spill, and cut off the excess part. Continue the wrapping process by adding the remaining pieces together.
Put the wraps in a large plate.
Lay the leaves that you do not use on the floor of the pan. When arranging the stuffed leeks, put the wraps with outer and thick leaves of the leek on the bottom.
When the arranging process is finished, fry 1 tablespoon of tomato paste with 1 tablespoon of olive oil in another bowl, then pour 1.5 cups of boiling water on it and mix it. Pour this tomato paste water into the pan so that it reaches the level of the leeks, cover it with a plate and cook it for about 35-40 minutes. Cooking time may differ according to the type of leek and the fire of the stove, do not give up control.
Serve it plain or with your own homemade yoghurt like us. Bon Appetit!

Posted on: March 31, 2022I’m just curious about the amount of leeks to use. Your recipe calls for 15 kg and, where I live it means 33 pounds. Do you perhaps mean to say 1.5 kg instead of 15 kg?
