Artichokes with Olive Oil;
The artichoke came out of the Cretan cuisine and entered the Ottoman Palace cuisine. It is mostly cooked in this way with olive oil. Artichoke is very rich in phosphorus, calcium, iron, sodium, potassium, magnesium, zinc, vitamins A, B1, B2, B6 and C. And is also beneficial for the digestive system due to its richness in fiber as well as its immune system strengthening feature.

How To Make Artichoke With Olive Oil?

First, peel the artichokes and put them in water with lemon so that they do not turn black.

Then finely chop the onions and garlic.

Finely dice the carrots and potatoes.

Put half of the oil in a sauté pan and saute the onions and garlic for 5 minutes. Add the mint and salt and mix.

After the onions are sauteed, put the artichokes on top of the onions. After adding the carrots, potatoes and peas, pour the orange juice and light the stove again.

Cook all the ingredients you put in the pan first on medium heat, when it starts to boil, on low heat for a total of 30 minutes.

Check especially if the carrots are cooked. If the carrots are cooked, pour the other half of the olive oil on them and turn off the stove.
