How To Make Broad Beans Soup With Avgolemono Sauce?
* Chop broad beans very finely and sauté them with garlic in a pot whit olive oil.
* When broad beans start to change color, add black pepper, cumin, thyme and flour to the pan and continue sauting.
* Immediately after, add the water to the pot, stirring slowly. While you wait for it to boil, for avgolemono sauce, add egg yolk and the juice of half a lemon to the yoghurt in a bowl and whisk them well.
* 10-15 minutes after the pot starts to boil, take 3-4 spoons of its water, add it to the sauce and mix it well, then slowly pour the sauce into the pot and mix. Add the dill and boil for 5 minutes, then turn off the stove.
Serve it with optionally sprinkled red ground pepper on top and a lemon slice on the side. Bon Appetit!
