Chop onion into small cubes and slice garlics.
Cut the peeled tomatoes and capia peppers into small cubes.
After carefully cleaning all the seafood, wash them in plenty of water.
In order to obtain the fish stock, fillet from a large size white fish; like bass, cod and flat fish or sea bream (you can put the fillets in the freezer to use later), put the middle bone and the head part in the pot and boil it.
Heat half of the olive oil in a thick and wide-bottomed pan. Saute onions and garlic in olive oil.
After washing the rice in plenty of water and draining the water, put it in the pan and add the diced tomatoes and peppers and fry them by stirring occasionally.
Add white wine and saffron and cook over high heat.
Add half of the hot water and let it cook on low heat in a covered pot adding salt and black pepper.
After heating the remaining olive oil in another pan, add all the seafood in order and sauté for a short time on high heat.
After sautéing the seafood, put it all in the rice pan and add the peas and the remaining hot fish stock. Cook all the ingredients together on low heat until the water is absorbed.
